Sumac is made from the dried fruits of a subtropical tree. It's tangy and fruity, almost lemony, and is a primary ingredient in Levantine za'atar. The tartness helps cut through fatty meats like duck and lamb, it can be used in place of a squeeze of lemon in recipes, and is perfect on humus, eggplant, and summer squash.
