Sage is an earthy herb with delicate leaves that, when dried, easily rubs off into a fluffy soft powder. Add rubbed sage towards the beginning of cooking to allow volatile flavors to cook off while retaining the herbal quality. Sage is great with meats like poultry and pork, cheese, and of course in brown butter sauce for gnocchi.
