Filé powder, also called sassafras, is an essential ingredient in gumbo. It's made from the dried and ground young leaves of the sassafras tree and serves to thicken gumbo once it's taken off the heat. But that's not all it's good for—you can also use it to thicken and flavor gravies, sauces, soups, and cooked beans and lentils.
