Flaky sea salt is what you should turn to when you want people to know there's salt on the food. These big flakes don't dissolve quite so easily, so they stand out on fresh bread rolls, roasts and braises, and cookies and caramels. Use them whole, or crush them between your fingertips as you give your dishes a final seasoning.
