Mustard is one of the oldest spices used in the world. It's pungent and spicy on the nose, but that heat can be abated with a little acid. Brown mustard seeds are hot and are great in dressings, brines, sauces, and can be combined with yellow mustard seeds or on its own to make a spicy mustard sauce.
